One On One With Winemaker: Michel Rolland
To anyone inside of the wine circles, the name “Michel Rolland” needs no introduction. If you enjoy an occasional glass of wine but don’t dig deep, very deep into what is behind the label, it will probably tell you nothing. Unlike Araujo, Bryant Family, Harlan, Staglin – right? All of these are the cult wines from California, revered, adored and drooled upon by many wine connoisseurs. Let’s not forget Tenuta dell’Ornellaia from Italy, Angélus and Ausone from St-Emilion and l’Evangile from Pomerol. In case you didn’t know, Michel Rolland, classically trained French winemaker, is behind these and hundreds (I’m not exaggerating – search for his name on Wikipedia) of other wines. He is a consulting winemaker, sometimes also referred to as “flying winemaker”, who made wine on all continents and all possible and impossible corners of the world.
When I got an invitation for lunch with Michel Rolland, who was visiting New York to introduce some of his newest wines, I was excited at first, and then bummed. The lunch was overlapping with the Jura wine tasting, which I was planning to attend for a very long time. So as a last resort, I asked if I can meet with Michel Rolland after the lunch so I can ask him a few questions. To my absolute delight, kind folks at Deutsch Family, a wine importer company hosting the event, managed to arrange the time for me right after the lunch to sit down and talk to Michel Rolland.
As you understand by now, unlike most of my virtual interviews in this “one on one” series, this was a real face to face conversation, with a real handshake and visible emotions. At first, I was thinking about recording our conversation. That probably would be okay, but I never did this before, and fighting with technology in front of the busy man who was doing me a favor didn’t feel right. So I did what I always do – I prepared my questions in advance. After a subway ride and a brisk walk, I arrived – on time – and shake hands with the legend. We sat at the table, three different glasses of red wine appeared on the table. And conversation started – here is what we were talking about, with the precision of my fingers hitting the screen of the trusted iPad:
Q1: You made wine all over the world. Is there one place or one wine which was your absolute favorite?
“No. I like the challenge, so every time I’m going to the new place, it is very exciting.”
Q2: What was your most difficult project and why?
“To make wine, we need soil, grapes, and weather. When the weather is not playing, it is very difficult. There were 2 places which were the most difficult. First one was India – everything is great except the climate. India has only 2 seasons – dry and wet. Another one was China – extreme climate, very difficult to make wines. In the project in China, years 1,2 and 3 had no frost, then in the year 4 we decided not to cover the vines, and half of the vineyard became dead.”
Q3: You are known to create big and bold style wines. At the same time, it seems that wines with restrained are more popular today. Did you make any changes to your winemaking style to yield to the popular demand?
“After 43 years in this job, it is good that I have style. So the style is what the market is asking – the wines are made to be sold, so we have to follow tendencies in the market. Even that not everything is changed at the same time, it is more of the evolution and adhering to the fashion. The wine to drink tonight is not the one to be stored for 10–15 years. So the wine have to be made more enjoyable younger, and this is what we do.”
Q4: Where there any projects which you rejected and if yes, why?
“Yes, of course, but it doesn’t happen very often. The biggest concern is the relationship with the team. Day to day in the cellar and field it is the team – if the relationship with the team is not good, I prefer to leave. For sure if nobody is happy, then it is better to leave. I never refused project because it is too challenging. In Chile, 25 years ago the variety called Sauvignonne had to be used, which was hard – and I didn’t refuse the project because it was challenging. So the relationship is the major part.”
Q5: Again, appealing to your worldwide expertise, what do you think is the hottest new wine region today, if there is one?
“We have to look back – we have new world and old world. France, Italy, Spain – being there before. Then came US, then South America. Chile, and Argentina is growing the fastest now. Then there is New Zealand and Australia. But I think the area around the Black Sea, which was historically there, is very promising. Now Turkey, Georgia, Armenia, Russia all started making really good wines and we will see great wines coming from there. I [actually] currently work in Turkey, Russia, Bulgaria.”
Q6: What are the most undervalued wine regions in the world today, if there are any left?
“One of the most difficult countries to make and produce wines is South Africa – great wines which sell well only in UK, but very difficult everywhere else.”
Q7: What do you think of natural wines, which are very often are very opposite in style to “big and bold”
“We can’t fight against natural wines, but all the wines are natural [laughing], minimal intervention. We have to slow down with all the chemicals, but the wines should be made to be good wines – a lot of “Bio” is done only for marketing, so if it is done smart, it is good. I have small estate Val de Flores in Argentina which is for 8 years is completely “bio”, so yes, I support that.”
Q8: What are the latest projects you are working on?
“The one in Tuscany (Maremma) running by the German family, they have a wonderful vineyard and wonderful winery, and now making very good wines.”
Q9: You are a role model and a teacher for many in the wine world. Who were your role models and teachers?
“When I began my job my mentor was Émile Peynaud. It was another era. When I began the oenology, we were not speaking about quality. The goal was to avoid problems. I discussed this a lot with Peynaud. Peynaud was convincing people to do better in the cellar, to have clean wines, to use better material. It was very difficult, but Peynaud was great dealing with the people, so I learned a lot from him, including the patience for dealing with people. I often said that my job is 80% psychology, and 20% oenology, this is what I learned from Peynaud.”
Q10: What are the new trends in the wine world? What wine consumers should expect to see and experience over the next few years?
“I think people like more and more approachable, and gentle wines – full bodied, but gentle. The big problem I see is that during the 90s, I did a lot of work where we dramatically improved quality. In the 2000s, we drunk best wines we could. What I don’t like now that everybody is going after cheaper and cheaper wines – we can still do good wines, but not better than in the previous years. In the end, the wine is a business, so I don’t want to see people reduce quality just to survive.”
As you can imagine, Michel Rolland didn’t come to the New York to talk to me. He was promoting his latest project, the wines of André Lurton which he helped to create. André Lurton is the winemaker in Bordeaux whose family winemaking heritage goes back more than 200 years, and who is not only known as a winemaker but also was very instrumental in advancing Bordeaux wine industry, including creating of the new appellations.
Here is the story of how Michel Rolland started working with André Lurton (don’t you love wines with the story?):
“Lurton is one of the last projects. I had an interview on the radio, and the journalist asked me if I have any regrets. I said at 65 years old, I don’t have a lot of regrets. When making wines, you get to meet wonderful people from all over the world. So the regret is “why I never met this guy” – one of such people is André Tchelistcheff – I met his wife, but never met him. And then the journalist asked me “who else”. So I said in Bordeaux, there is André Lurton, who I never met and worked together.
3 hours after the interview I received a call from Andre Lurton who said: “come and meet me”. Now we are working together.
So what we are doing is looking after the future, what can we produce for the people. We have to make approachable wines – still with the ability to age, but more approachable. “
This was the end of my conversation with Michel Rolland. We spoke for about 45 minutes, and it was clear that Michel had to continue on with his day. But there were still three wines standing in front of me, so I had to go through the speed tasting and only capture general impressions, there was no time for detailed notes. Here are my brief notes:
2012 Château Bonnet Réserve Rouge Bordeaux ($14.99, Merlot/Cabernet Sauvignon blend) – beautiful tobacco nose, fresh fruit, soft, round – clearly Bordeaux on the palate, green notes, restrained. Green notes do get in the way, though.
2012 Château de Rochemorin Rouge Pessac-Léognan ($33.99, Cabernet Sauvignon/Merlot blend) – beautiful, classic Bordeaux, great finish, some presence of the green notes
2012 Château La Louviére Rouge Pessac-Léognan ($74.99, Cabernet Sauvignon/Merlot/Petite Verdot), new oak, open fruit on the nose, lots of complexity, very beautiful, layers, delicious finish. Overall delicious wine, my favorite of the tasting. This wine was polished and concentrated, and I would love to drink it every day.
What is interesting for me here (besides the clear proof that I’m a wine snob who prefers expensive wines) is that there is a clear progression of taste and pleasure in this three wines – the price was increasing accordingly, and this is how things are quite often in the wine world.
After an encounter like this one, and the pleasure of talking with the legend, if blogging would be my job, I would gladly proclaim “I love my job”. But even without it, I still would proudly say that I love blogging as it makes possible conversations like this one, which is priceless for any oenophile. Cheers!
New Versus Old – Is Wine World Upside Down?
This post is an entry for the 23rd Monthly Wine Writing Challenge (#MWWC23), with the theme of “New”. Previous themes in the order of appearance were: Transportation, Trouble, Possession, Oops, Feast, Mystery, Devotion, Luck, Fear, Value, Friend, Local, Serendipity, Tradition, Success, Finish, Epiphany, Crisis, Choice, Variety, Pairing, Second Chance.
New. We all crave, adore and worship new in our lives. New experience. New restaurant. New baby. New job. New car. New iPhone. New house. New puppy. Add “new” to practically any object, and it instantly becomes something exciting.
The “new” is not limited to the things and objects. New ways constantly appear, and we embrace them wholeheartedly. New technologies and new processes are born every day. Self-driving cars. 3D printers. We store our pictures in the cloud. It’s all new, new, new around us.
We love new so much that “old” becomes almost en expletive. We might attach “old” to the experiences, but not to the objects! Think about it. When you are looking for the used car, the dealer will refer to such a car exactly like that – used. She might even say “almost new” or “gently used”. But you will never hear from the dealer that they want to offer you this old car – unless you are in the market for antiques – but even then “old” descriptor will be avoided. Or let’s say you are looking for a house. Ever heard agent saying “let me show you this old house“? We learn to be afraid of the world “old”, as we don’t want to get old ourselves.
Talking about wine world, the word “new” is exciting as in any other aspect of our lives. In essence, the whole wine world is built on the concept of new – ever year there is a new harvest, and a new wine will be produced from the grapes of that new harvest. New labels are made for the wines. New wineries are founded. New tasting rooms are built. New vineyards are planted. New processes are invented to press the grapes, to ferment them, to preserve wines, to bottle. New packaging (wine in a can, anyone? wine on tap?). New is a most prominent concept in the wine world.
But the concept of “old” is ohh so different when it comes to wines. “Old” in the wine world commands such a respect that we might not find in any other areas of human life. Let’s start in the vineyard. So you planted a new vineyard? Great. Now you need to wait until it will become old, as for the most of vineyards you need to wait at least 3-4 years before they will produce fruit suitable for winemaking. And that vineyard has to become old in the natural way, just by letting the time pass – there is no magic bullet.
To top it off, the older vineyard gets, the better it is. Ever seen the words “old vines” on the bottle? May be viñas viejas? Or how about vieilles vignes? These words mean exactly what they say – that this wine was made from the grapes harvested from the vineyards which had been around for a long time – 20 years, 30 years, 60 years, 100 years. The term “old vines” is typically not regulated, so there is no way of knowing exactly how old the vines are – but often the back label will give you that information. Very often that “age” is also reflected in the price – the older the car, the less it costs – but it is exactly opposite in the wines – the older the vines are, more expensive wine becomes (older vines yield less grapes with higher flavor concentration = tastier wine).
“Old” doesn’t stop in the vineyard. Lots and lots of wines are aged before they are released – both by law and by the desire of the winery. By law, non-vintage Champagne have to age for a minimum of 15 month, and vintage Champagne for at least 3 years – in reality, most of NV is aged for 2-3 years, and vintage is typically 4-10. By law, Rioja Gran Reserva requires at least 5 years of aging before the release. By law, Brunello Rieserva can be sold not earlier than 6 years after the harvest. Many of the wineries in California offer so called “library releases”, when the wines are aged for you in the winery’s cellar in the ideal conditions. Some wineries in Bordeaux sell their wines only 10 years after the harvest, including First Growth Chateau Latour, which recently declared that “vintages will be released when the chateau believes they are ready to drink”. Let’s go down all the way – how about some 100 year old Para Vintage Tawny from Seppeltsfield in Australia, which is released … yes, 100 years after the vintage date.
It is not that “old” is unquestionable winner in the world of wines. More often than not, “new” and “old” are clashing – sometimes in amicable ways, sometimes – not so much. One of the simplest “conflicts” – new oak versus used oak. This, of course, is what making winemakinng an art, as there is no hard and fast rule to when to age wine in old oak barrels versus new oak – each has its own benefits. Another form of the simple “conflict” is an internal fight which oenophile endures trying to decide when the wine from her cellar is ready to drink – there is also lots of good bad advice coming from all the wine professionals and the media – and we still are trying to figure that magical moment when the wine is perfectly “old“, or rather “aged” as we like to say, to maximize our pleasure. And then you got all those violent clashes between old and new – think about “traditional Barolo” versus “new style Barolo”. Think about fight for the Super Tuscans, attempts to introduce the new grapes in Brunello, or just any winemaker trying to do something new against the rules of the appellation.

OTBN 2016: Two Spanish Jewels, And What The Others Opened
I don’t like making decisions. Here, I said it. Not around the wines for sure. But I have a justification for this indecisiveness – and I’m sure many oenophiles will attest to the same. You see, I like to drink aged wines. Despite popular notion from many wine professionals that people don’t understand what is good for them and should drink their wines young (here is the latest piece from Steve Heimoff on the subject), I still like my wines with a little age on them. Heck no, I actually like them well aged. But most wines in my cellar are in the single quantities (yes, that means One bottle) – therefore, if I open it, I will not be able to find out if it will improve with age. As you can imagine, this can lead to many, many “indecisive moments”.
So for the people like myself, Open That Bottle Night was invented. I will not go again into the history of the OTBN – I already wrote about it extensively here. But the event itself really makes you to take decisions and “just do it”.
Yes, the decision making is frustrating. But once decision is made, frustration is out and anticipation and excitement are in. It would be so interesting to understand how the mind (subconscious?) arrives at a decision where there are lots of possibilities, all promising similarly happy outcome (in the end of the day, no matter what bottle you will open, as long as it is not spoiled, you will still be happy – with a 99% chance). Someone really have to study how the oenophile’s mind works. So in this mysterious way, all of a sudden the decision came to open two of the Spanish wines I had for a little while. To be absolutely honest – first I decided on those two wines, then I started figuring out what was making them special – and these wines are special.
How special? Both wines were made by pioneers, and they represent true passion and vision which makes winemaking so unique. The first wine was called Martinsancho, made out of the grape called Verdejo in Rueda, Spain. Martinsancho is the name of the vineyard in Rueda, where Verdejo had been planted since 17th century. But you see, in the mid 1970s, the whole size of the vineyard was only 1 acre, and it was pretty much the last of Verdejo left in Spain, due to natural (phylloxera) and man made (political, economic) causes. Angel Rodriguez had a passion, vision and tenacity to preserve that vineyard, replant the original cuttings on the 25 acres, and literally single-handedly restart Verdejo production in Rueda. Angel Rodriguez’s hard work was even honored by the King of Spain Juan Carlos.
How was the wine? One word – delicious. One of the very best Spanish white wines I ever had. Here are the notes:
2009 Ángel Rodrígues Martinsancho Verdejo Rueda DO (13% ABV, $17, 100% Verdejo)
C: light golden, very pretty
N: restrained, touch of grass, minerality, almonds
P: great deal of finesse, it is smooth, silky, good acidity, medium to full body, elegant
V: 8+, great world class wine
Our second started with this view once the top foil was removed:
From my experience, this doesn’t mean the wine is spoiled (at least so far it never happened), but it still makes you uneasy – there are no substitutes in this game. This was the only hiccup though, the wine itself was unaffected.
Similar to the first wine, this one was also a product of a passion, a dream. Clara Concejo Mir inherited the vineyard from her grandfather Mario. Located at the high altitude of 7,750 feet, this is first vineyard in teh Ribera del Duero region; the vineyard is also adjacent to the vineyards of legendary Vega Sicilia. While Tempranillo is a king in Ribera del Duero (often called Tinto Fino), Clara also had a vision to add Cabernet Sauvignon to her wine which she called Mario (yes, in honor of her grandfather). She also had perseverance to lobby the regulatory body of Ribera del Duero to allow officially put Cabernet Sauvignon on the label of the Ribera del Duero wine. The rest of this can be subsided to a moan which you will produce upon taking a sip of this wine.
2008 Vegaclara Mario Ribera Del Duero DO (13.5% ABV, $25, 77% Tempranillo, 23% Cabernet Sauvignon, 13 month in oak – 33% French, 33% American, 33% Hungarian)
C: dark garnet
N: fresh berries, touch of barnyard, eucalyptus, black currant
P: yum! (is that a good descriptor?) silky smooth, polished, great depth and concentration, black currant, dusty mouthfeel, flawless, perfect balance
V: 9, a wine of an outstanding finesse
Now that I told you about wonderful wines and passion we experienced, I want to give you a glimpse into what the others were drinking. First of all, I was very happy to see an increased number of posts about OTBN all over the social media – or as at least it seemed as an increased number of posts to me. And then over the course of the week I inundated lots of people on Twitter, keep asking them what are they going to drink (and making sure they will remember about OTBN) – I hope it didn’t cost me any followers, but oh well, it is a good cause. Open That Bottle Night 2016: What Wine Are You Going To Open?
Open That Bottle Night (OTBN for short) is an [international] phenomena created by Dorothy Gaiter and John Brecher, the writers of the hugely popular “Tastings” wine column in Wall Street Journal for more than 10 years. Once inundated with the questions “what is the right time to open this [special] bottle”, they designated last Saturday of February as the day when oenophiles should really pull the plug cork on that bottle which was stored until the “special day” would arrive. Only most of the oenophiles have a problem deciding if today is already special, or not special enough.
With the idea to encourage oenophiles to finally reach for That Bottle, Dorothy and John invented OTBN back in 1999. From there on, the OTBN was steadily increasing in popularity not only in the US, but around the world, with people getting together for the special OTBN parties and dinners, and restaurants offering discounts and special menus.
Last November, I had a pleasure of meeting Dorothy and John at the Piper-Heidsieck Vin Clairs tasting in New York, which I attended together with Jeff, better known as The Drunken Cyclist. As part of conversation with Dorothy we also touched on the subject of OTBN. To my surprise, I got an email from her two weeks ago asking for my thoughts on selecting the wine for upcoming OTBN, which will take place this coming Saturday, February 27th. I gave her somewhat of a mumbling answer, which was included into her OTBN 2016 post in the Grape Collective Magazine, together with the similar input from Jeff.
Let me tell you why you and every other oenophile should take part in OTBN and open That Bottle now. Two reasons:
- Wine might not be any good
- You might not be any good
I’m not trying to be overly dramatic or use scare tactics of any sort. This is simply what is called “life”.
Think about that prized wine bottle. May be you brought it from your honeymoon trip or anniversary trip, great cruise or an amazing vacation in the vineyards. Since it made it to your house, was it ideally stored? Was it Barolo, Bordeaux or Chablis, which can age great without much regard to the producer or a vintage? Or was it delicious Rosé from Provence, sumptuous red Cotes du Rhone or a playful Vouvray? Chances are, even in ideal conditions, those wines will not last for too long. The whole idea behind those “special” wines is that they are connected to our emotions and memories, and when we drink them we get to re-live the joyous moment of the past – but you do want the wine to match the taste as you remember – and if it doesn’t, well…
The second issue is also a problem. Take a look at Jeff’s post about meeting Dorothy and OTBN, and take a look at the source of his second possible choice of the OTBN wine, the ’85 Inglenook – he got it from someone who could no longer drink wine due to the medical reasons – and that person was devastated about it, as any of us would under his circumstances. Your health can change, your palate can change – do you really want to risk the joy of having a great glass of wine by not been able to find the “ideal moment”?
Still undecided? Think about it this way. Opening of That Bottle for the OTBN is a win-win, it always is. First, you get to drink the wine you always wanted to drink. Second, with opening of the bottle you are actually not losing anything – on contrary, you are gaining a great experience. If the wine is good, you are transported to the past, you get to re-live “the moment” once again – and create a new memory for the future. If the wine is not good, or not as you recall – you still create a new memory, and you can move on to your next “special bottle” (pleeease, don’t tell me you had one and only one, okay?).
Don’t know if I succeeded in convincing you, or if you even needed to be convinced, but I hope you will decide and open that special bottle, no matter what makes it special. And then I also hope that you will leave me a comment and tell me what you are planning to open or what you had for OTBN, as I’m dying to know.
As for me, still need to make up my mind – there are lots of choices, so I’m sure it will be a last minute decision, but rest assured that the special bottle will be open – and I promise to tell you all about it. Enjoy the OTBN, and don’t overthink it – just do it! Cheers!
500! Now Official
As many of you know, I got the bug of The Wine Century Club for the endless quest to try wines made from as many different grapes as possible – yes, you can call me a grape geek, I don’t have an issue with that.
Back in August of last year I wrote a post about reaching the 500 grapes milestone and submitting my application for Pentavini level at The Wine Century club. Two days ago, I got a suspiciously promising envelope in the mail, and there it was:
Well, it is nice to get an acknowledgement for your geekiness in the form of this cool paper; it also reinforces desire to continue the quest. You can see my grape count in the right column of this blog page – yes, I got a long way to go to get to the next level, but it is a fun journey. At this point, The Wine Century Club doesn’t have a designation for the 600 grapes level – but it doesn’t make the process any less fun.
To look at things seriously, this is nothing more than a form of an adult fun, just another way to collect the experiences. There is no need to congratulate with this achievement, really. But I will be happy to be a source of encouragement for all the grape aficionados out there; if you want to leave comment, tell me about your own journey in the Wine Century Club quest, no matter how many grapes you tried so far. While The Snow Was Falling on East Coast…
I heard about snow storm targeting East Coast of the USA on Wednesday. As I was at the meetings in San Diego, my first thought was “I have to make it back home to Connecticut”. Originally, I was supposed to take the red eye flight on Friday, come home for a day, and then leave for the conference in Florida on Sunday. I called travel agent right away, and moved my flight back to Newark to the middle of the day on Friday, and Florida flight to Monday morning – and felt pretty comfortable that I dealt well with upcoming storm.
Only on Friday, when I was practically ready to start moving to the airport, I got a message on my phone any air traveler is dreading the most: “your flight had been cancelled”… The thought of my family dealing with the snow on their own was practically unbearable. After talking to the travel agent, the truth settled in – I will not be able to make it home for the weekend, no matter how hard I will try. And yes, I will simply have to go directly to Florida without stopping in New York – no other options.
Coming out of the stupor, I realized – I have very close friends living close by in Irvine, which is about hour and half from San Diego – visiting them for the weekend would be a lot better than sitting by myself at the hotel – so Irvine it was.
My wife kept me updated on the snow situation back at home – this is what they will have to deal with today, and even for a while:
My day looked quite different – I discovered a Farmer’s Market in California. In the United States, there are two primary sources of fresh fruit and produce all year around – California and Florida, this was of course known to me. And farmer’s market is something which is not difficult to find in Connecticut, where I live – but only during the summer, mostly offering vegetables and a bit of fruit, and somehow always inciting me to challenge the authenticity of the actual “local farm” origin of that produce, seeing it sold from the pretty big trucks.
Thus farmer’s market we visited in Laguna Beach in California on Saturday in January was absolutely mind boggling experience for me as a foodie. All the citrus fruit you can imagine – grapefruit red and white, oranges, blood oranges, mandarins, Satsuma mandarins – to be honest, I don’t think I ever tasted a grapefruit which was as sweet and delicious as the one I tasted at this farmer’s market. Then you got strawberries, raspberries, blueberries, apples, pears – lots of them. Everything tastes fresh, delicious and almost unreal for someone from the east coast. All sorts of vegetables, of course, almonds with lots of different preparations, walnuts, dried fruit – I can go on and on – I’m sure you can tell that I can hardly contain my excitement. So here is simply an extravaganza of colors for you, in the form of the pictures – unfortunately, blogs can’t convey taste and smell – not yet, at least:

Does the Wine Deserves Second Chance?
This post is an entry for the 22nd Monthly Wine Writing Challenge (#MWWC22), with the theme of “Second Chance”. Previous themes in the order of appearance were: Transportation, Trouble, Possession, Oops, Feast, Mystery, Devotion, Luck, Fear, Value, Friend, Local, Serendipity, Tradition, Success, Finish, Epiphany, Crisis, Choice, Variety, Pairing.
Let me describe to you I’m sure a very familiar situation: the bottle of wine is opened, wine is poured in a glass, you take a sip and … you don’t like it. Too sweet, too acidic, too sharp, too tannic, too “biting” – it is not always that you follow a sip with “wow” or “ahh”. What do you do next? Of course I understand that this question doesn’t have a single answer, as everything depends on the context. And as a side note, it is also implied that the wine is not spoiled – not corked, not cooked, not oxidized – it is simply not to your liking.
Let’s assume that you opened the wine in the comfort of your home. You can simply put the glass aside and decide to wait and see if the wine will change (you of course hope for the better). If this happened in the restaurant, your choices are limited – if you just ordered this bottle out of your own will, in most of the cases you can’t send it back (remember, we said it is not spoiled) – you can ask for the wine to be chilled or decanted, but that is about all you can do. If you are at a friend’s house, you probably have only one choice – to smile and to say that this is delicious, unless you grew tired of that friendship long time ago, so then it might be a good opportunity to end it on a high note.
No matter what setting it was, let’s assume you didn’t get to the point of liking the wine, and now it is in your memory as the wine-I-never-want-to-touch-again. Would you ever think of giving this wine another chance?
Yes, I know. There is such an abundance of wine around us that if we don’t like something, why bother with any “second chances”? It is humanely impossible to taste all the wines produced in the world, so why bother with something which you were done and over with? Yes, by all means you have a point. But is there a tiny little voice inside your head, which says “may be that wine needed more time to open up”, or “may be I was just in the wrong mood”, or “may be my food overpowered the wine”? Do you ever get any of those “may be”s, so you would actually go and try the wine again, just because you are curious?
I understand that this is matter of personality and an outlook on life in general, but more often than not, I find myself in the “may be?”, a “what if?” group. This is especially true when it comes to the wines which I open at home. If I take a sip of wine and don’t like it, I often put it aside, to try it on the next day. Or may be the day after next. Or may be even after that. One of my favorite examples is the bottle of 2002 Dunn Howell Mountain Cabernet Sauvignon, which opened up only on the 5th day (the wine was 11 years old when it was opened). When I took a first sip after just opening a bottle, the wine was tannic and literally devoid of fruit – there was no pleasure in that wine. Pumped the air out, put it aside for a day. Next day – literally no changes. And so was the story on the next day, and the next day. But I was not not ready to declare the wine a failure and just pour it out – kept giving it second chances. And the reward came on the day number 5, with layered fruit and delicious, powerful wine.
I have another example from literally 2 weeks ago, when we opened a bottle of 1980 Lamborghini Colli del Trasimeno Rosso (I can tell you that I bought the wine strictly on the basis of the fun name – Lamborghini – a car which I’m sure anyone would be happy to drive at least once). The wine was opened, went into a decanter – and for the whole evening nobody liked to drink it, as it tasted more as brine than the wine. I can’t tell you if I was giving the wine a conscious second chance, or was simply lazy to pour it out. Next day before clearing the decanter I decided to take a little sip – why not? And it appeared that the wine actually developed into delicious, mature wine, with the nose of tertiary aromas and palate full of sweet plums. Not the most amazing wine I ever had in my life, but perfectly delicious, mature wine which delivered lots of pleasure.
I could go on and on with similar examples, but I’m sure you got my point – the wine could’ve been discarded as “bad” and the great pleasure would be missed, if it wouldn’t be for the second chances.

A Puzzle of a Hundred Pieces

Is there a person in this world who doesn’t like puzzles? You can save the “duh” exclamation for later – I’m sure there are some people who don’t, but an absolute majority enjoys the puzzles of some sort, whether expressed in the form of words, numbers, colorful picture pieces, link chains or whatever else.
So what if I tell you that you will be given a hundred of random pieces – not just you, but a group of people will receive a hundred of totally random pieces, but they all would have to build exactly one and the same picture out of those 100 random pieces – would you like to take part in such a challenge? Do you think you would be up for it?
While you still considering if you are up for a challenge, you are probably also wondering how puzzles relate to the wine and what you are still doing reading this nonsense where you were looking for the information on the wine, plain and simple. Actually, it appears that this type of puzzle with random pieces but the same resulting picture has very direct relationship with the world of wine. Not necessarily with the whole of it, but definitely with one of the most noble parts – the Champagne.
If you ever read the story of Benedictine monk Dom Perignon, often credited with creation of Champagne (”come quickly, I am drinking the stars”), many wine historians agree that major Dom Perignon achievement is not creation of Champagne itself, but perfection of the art of blending. If you think about it, blending resembles the process of putting together puzzle pieces. And to complete the picture, take a look at the description of any of the Champagne made by so called Champagne Houses – Veuve Clicquot, Moèt and Chandon, Bollinger, Perrie-Jouiet and hundreds of others – they all talk about a “signature taste” of their Champagne House, which is painstaking maintained exactly the same through the hundreds of vintages.
While I knew about significance of blending in production of Champagne, I never understood a true scale of an effort. A month ago (almost two month by the time I was able to finish this writing), I was lucky enough to attend a first ever Vins Clairs (give a few seconds – I will explain what this is) tasting hosted by the Champagne House of Piper-Heidsieck and Terlato Imports in the US – well, it was simply first ever Vins Clairs tasting conducted outside of France. The event was led by Régis Camus, Chef de Cave and Winemaker for Piper-Heidsick. And yes, we spent time learning about puzzles.
Let me give you a brief photo report for what was happening at the event first, and then of course we will go back to puzzles. When I arrived (early, to get a seat in front), the room was ready for the tasting:

And then we started to learn about puzzle pieces. Of course, first talked about what Champagne is – “Champagne comes only from Champagne”:
All grapes used in production of Champagne come from 320 different vineyards, which are also called CRUs. Out of those 320, only 17 have a status of Grand Crus – as they produce distinctly better grapes. Just to give you few more fun numbers – there are about 19,000 grape growers in Champagne, out of which only about 2,100 produce their own wine. There are also about 50,000 Champagne labels – which, of course, explains that it is always possible to come across a champagne bottle you never saw before.
But let’s get to our puzzle, as we still need to solve it. Every year, the grapes are harvested (just a quick reminder – there are 7 grapes allowed to be used in Champagne, but only 3 – Chardonnay, Pinot Noir and Pinot Meunier are really used), pressed and fermented into the still wine, same as it would be done with any other wines – with the exception of color – red grapes, such as Pinot Noir and Pinot Meunier, still produce clear juice if not kept in contact with skins, and this is what typically done in production of Champagne – unless Rosé is in the making. Once fermented, these still wines now become foundation of Champagne, known as Vins Clairs.
As common with any still wines, the year is a year is a year – every year is unique and different. If the year was great, let’s say, for Chardonnay, the Chardonnay Vins Clairs will become a Reserve wine and will rightfully occupy the place in the cellar. If the year was just okay, the wine, of course, will be used, but will not be cellared for long. If the year was terrible, the wine simply might not be produced. But it is okay – remember, we got lots of pieces to play with.
First, we tasted through 5 different Vins Clairs – each one a component in the Piper-Heidsieck Champagne, each one with its own role. Chardonnay brings fruit aroma, citrus, minerality. In reserve wines, Chardonnay will bring more aromas. Pinot Noir provides body and structure, and it is usually main component in Piper-Heidsieck Non-Vintage Champagne. Pinot Meunier brings fresh fruit. Below are my notes, almost verbatim, as I followed explanations and tasted the wines:
2014 Chardonnay Avize – Avize village is in the center of Côtes de Blanc, and it is one of the 17 Grand Crus. Straw pale color. Beautiful nose, minerality, fresh, citrus. Clean acidity on the palate, green apple, nice acidic finish. This wine was mostly used for vintage and reserve wines, and will be a part of non-vintage champagne in 5–6 years down the road.
2014 Pinot Noir Verzy – Verzy is also one of the 17 Grand Crus. Light golden color. Interesting nose, mostly white fruit, very serious acidity, lemon/lime level, very interesting. I would have to agree on structure. In a blind tasting I would say Muscadet.
2014 Pinot Meunier Ecueil (fleshy and fruity, red grape with white juice). Light golden color. Brings in fresh fruit to the blend. White fruit on the nose. Pinot Meunier rarely used for reserve wines. Still acidity, but acidity of the fruit, more of the green apples.
2009 Chardonnay Avize very interesting color – green into golden. Beautiful minerality, classic Chablis gunflint. Delicious. Creamy, medium body, white fruit, restrained acidity, long finish. I would gladly drink this wine by itself.
2008 Pinot Noir Verzy color similar to Chardonnay – green-golden. White fruit on the nose with touch of minerality. A bit more fruit on the palate, but still extremely pronounced acidity.
After we tasted through the 5 Vins Clairs, we were asked to refresh our palates with a sip of Pinot Meunier, and the final wine #6 was poured. Boy, what difference was that – mind boggling, starting from the color:
2014 Assemblage Piper-Heidsieck – blend of 2014 (90%) and reserve wines (10%) – darkest color of all, beautiful nose with yeastiness, and fresh bread, good minerality. One would never guess that you can get that from individual wines. Color came from the fact that the wine was not stabilized yet. Delicious overall, excellent acidity. 55% Pinot Noir, 15% Chardonnay, the rest is Pinot Meunière. There are 100–110 crus in this final assemblage, and the work on it was finished very recently. This wine was bottled in 2015, and will be released in 2018.
Someone asked if it is possible that the puzzle will not be solved in some years. Régis Camus gave us a little smirk, and said that no, this is not possible – the puzzle will be always solved.
What can I tell you? This was definitely an eye-opening experience – we were allowed to touch the magic, the magic of creation of one of the most revered wines in the world, and it definitely exceeded my expectations.
This was the end of the Vins Clairs tasting, but the beginning of “no-holds-barred” Piper-Heidsieck Champagne tasting -we had an opportunity to try all the major Champagne Piper-Heidsieck offers – 2006 Brut Vintage, 2002 Rare Millesime, Rosé Sauvage and Cuvée Sublime (Demi-Sec)
At this point, I was part exhausted, part excited, and stopped taking notes – I can only tell you that 2006 Brut and Rosé Sauvage were two of my favorites, but I would have to leave it only at that.
Here you go, my friends – the magic of Champagne, a puzzle of a hundred pieces – but the puzzle which is always solved. The New Year is almost here, and of course it calls for a perfect bottle of Champagne – but even if not a New Year, we can simply celebrate life, and every day is a good day for that.
