One On One With Winemaker: Michel Rolland
To anyone inside of the wine circles, the name “Michel Rolland” needs no introduction. If you enjoy an occasional glass of wine but don’t dig deep, very deep into what is behind the label, it will probably tell you nothing. Unlike Araujo, Bryant Family, Harlan, Staglin – right? All of these are the cult wines from California, revered, adored and drooled upon by many wine connoisseurs. Let’s not forget Tenuta dell’Ornellaia from Italy, Angélus and Ausone from St-Emilion and l’Evangile from Pomerol. In case you didn’t know, Michel Rolland, classically trained French winemaker, is behind these and hundreds (I’m not exaggerating – search for his name on Wikipedia) of other wines. He is a consulting winemaker, sometimes also referred to as “flying winemaker”, who made wine on all continents and all possible and impossible corners of the world.
When I got an invitation for lunch with Michel Rolland, who was visiting New York to introduce some of his newest wines, I was excited at first, and then bummed. The lunch was overlapping with the Jura wine tasting, which I was planning to attend for a very long time. So as a last resort, I asked if I can meet with Michel Rolland after the lunch so I can ask him a few questions. To my absolute delight, kind folks at Deutsch Family, a wine importer company hosting the event, managed to arrange the time for me right after the lunch to sit down and talk to Michel Rolland.
As you understand by now, unlike most of my virtual interviews in this “one on one” series, this was a real face to face conversation, with a real handshake and visible emotions. At first, I was thinking about recording our conversation. That probably would be okay, but I never did this before, and fighting with technology in front of the busy man who was doing me a favor didn’t feel right. So I did what I always do – I prepared my questions in advance. After a subway ride and a brisk walk, I arrived – on time – and shake hands with the legend. We sat at the table, three different glasses of red wine appeared on the table. And conversation started – here is what we were talking about, with the precision of my fingers hitting the screen of the trusted iPad:
Q1: You made wine all over the world. Is there one place or one wine which was your absolute favorite?
“No. I like the challenge, so every time I’m going to the new place, it is very exciting.”
Q2: What was your most difficult project and why?
“To make wine, we need soil, grapes, and weather. When the weather is not playing, it is very difficult. There were 2 places which were the most difficult. First one was India – everything is great except the climate. India has only 2 seasons – dry and wet. Another one was China – extreme climate, very difficult to make wines. In the project in China, years 1,2 and 3 had no frost, then in the year 4 we decided not to cover the vines, and half of the vineyard became dead.”
Q3: You are known to create big and bold style wines. At the same time, it seems that wines with restrained are more popular today. Did you make any changes to your winemaking style to yield to the popular demand?
“After 43 years in this job, it is good that I have style. So the style is what the market is asking – the wines are made to be sold, so we have to follow tendencies in the market. Even that not everything is changed at the same time, it is more of the evolution and adhering to the fashion. The wine to drink tonight is not the one to be stored for 10–15 years. So the wine have to be made more enjoyable younger, and this is what we do.”
Q4: Where there any projects which you rejected and if yes, why?
“Yes, of course, but it doesn’t happen very often. The biggest concern is the relationship with the team. Day to day in the cellar and field it is the team – if the relationship with the team is not good, I prefer to leave. For sure if nobody is happy, then it is better to leave. I never refused project because it is too challenging. In Chile, 25 years ago the variety called Sauvignonne had to be used, which was hard – and I didn’t refuse the project because it was challenging. So the relationship is the major part.”
Q5: Again, appealing to your worldwide expertise, what do you think is the hottest new wine region today, if there is one?
“We have to look back – we have new world and old world. France, Italy, Spain – being there before. Then came US, then South America. Chile, and Argentina is growing the fastest now. Then there is New Zealand and Australia. But I think the area around the Black Sea, which was historically there, is very promising. Now Turkey, Georgia, Armenia, Russia all started making really good wines and we will see great wines coming from there. I [actually] currently work in Turkey, Russia, Bulgaria.”
Q6: What are the most undervalued wine regions in the world today, if there are any left?
“One of the most difficult countries to make and produce wines is South Africa – great wines which sell well only in UK, but very difficult everywhere else.”
Q7: What do you think of natural wines, which are very often are very opposite in style to “big and bold”
“We can’t fight against natural wines, but all the wines are natural [laughing], minimal intervention. We have to slow down with all the chemicals, but the wines should be made to be good wines – a lot of “Bio” is done only for marketing, so if it is done smart, it is good. I have small estate Val de Flores in Argentina which is for 8 years is completely “bio”, so yes, I support that.”
Q8: What are the latest projects you are working on?
“The one in Tuscany (Maremma) running by the German family, they have a wonderful vineyard and wonderful winery, and now making very good wines.”
Q9: You are a role model and a teacher for many in the wine world. Who were your role models and teachers?
“When I began my job my mentor was Émile Peynaud. It was another era. When I began the oenology, we were not speaking about quality. The goal was to avoid problems. I discussed this a lot with Peynaud. Peynaud was convincing people to do better in the cellar, to have clean wines, to use better material. It was very difficult, but Peynaud was great dealing with the people, so I learned a lot from him, including the patience for dealing with people. I often said that my job is 80% psychology, and 20% oenology, this is what I learned from Peynaud.”
Q10: What are the new trends in the wine world? What wine consumers should expect to see and experience over the next few years?
“I think people like more and more approachable, and gentle wines – full bodied, but gentle. The big problem I see is that during the 90s, I did a lot of work where we dramatically improved quality. In the 2000s, we drunk best wines we could. What I don’t like now that everybody is going after cheaper and cheaper wines – we can still do good wines, but not better than in the previous years. In the end, the wine is a business, so I don’t want to see people reduce quality just to survive.”
As you can imagine, Michel Rolland didn’t come to the New York to talk to me. He was promoting his latest project, the wines of André Lurton which he helped to create. André Lurton is the winemaker in Bordeaux whose family winemaking heritage goes back more than 200 years, and who is not only known as a winemaker but also was very instrumental in advancing Bordeaux wine industry, including creating of the new appellations.
Here is the story of how Michel Rolland started working with André Lurton (don’t you love wines with the story?):
“Lurton is one of the last projects. I had an interview on the radio, and the journalist asked me if I have any regrets. I said at 65 years old, I don’t have a lot of regrets. When making wines, you get to meet wonderful people from all over the world. So the regret is “why I never met this guy” – one of such people is André Tchelistcheff – I met his wife, but never met him. And then the journalist asked me “who else”. So I said in Bordeaux, there is André Lurton, who I never met and worked together.
3 hours after the interview I received a call from Andre Lurton who said: “come and meet me”. Now we are working together.
So what we are doing is looking after the future, what can we produce for the people. We have to make approachable wines – still with the ability to age, but more approachable. “
This was the end of my conversation with Michel Rolland. We spoke for about 45 minutes, and it was clear that Michel had to continue on with his day. But there were still three wines standing in front of me, so I had to go through the speed tasting and only capture general impressions, there was no time for detailed notes. Here are my brief notes:
2012 Château Bonnet Réserve Rouge Bordeaux ($14.99, Merlot/Cabernet Sauvignon blend) – beautiful tobacco nose, fresh fruit, soft, round – clearly Bordeaux on the palate, green notes, restrained. Green notes do get in the way, though.
2012 Château de Rochemorin Rouge Pessac-Léognan ($33.99, Cabernet Sauvignon/Merlot blend) – beautiful, classic Bordeaux, great finish, some presence of the green notes
2012 Château La Louviére Rouge Pessac-Léognan ($74.99, Cabernet Sauvignon/Merlot/Petite Verdot), new oak, open fruit on the nose, lots of complexity, very beautiful, layers, delicious finish. Overall delicious wine, my favorite of the tasting. This wine was polished and concentrated, and I would love to drink it every day.
What is interesting for me here (besides the clear proof that I’m a wine snob who prefers expensive wines) is that there is a clear progression of taste and pleasure in this three wines – the price was increasing accordingly, and this is how things are quite often in the wine world.
After an encounter like this one, and the pleasure of talking with the legend, if blogging would be my job, I would gladly proclaim “I love my job”. But even without it, I still would proudly say that I love blogging as it makes possible conversations like this one, which is priceless for any oenophile. Cheers!
Daily Glass: Red with Dessert
When ordering wine with dinner, especially eating by myself, I practically never think of wine and food together. I usually look for the wine which would be interesting and affordable, without regard to the color or style. As last night was probably my 4th dinner of the trip at the same hotel restaurant, I knew that my choices were limited – I already had some (didn’t want to repeat), and some where just out of my price range. After scanning the list back and forth multiple times, I finally settled on 2013 M. Chapoutier Petite Ruche Crozes-Hermitage AOC (€7.20 per glass at the restaurant).
That choice combined together a few of the favorites. First, Crozes-Hermitage is an appellation which encircles the famous, but tiny Hermitage, and the wines in both areas are made from the same grape – Syrah, one of my absolute favorites – with Crozes-Hermitage been a lot more affordable. Second, this wine was made by Michel Chapoutier, one of my favorite producers, who I had a pleasure of meeting (and still have a blog post about it in the works 😦 ). The wine was just absolutely delicious – expressive nose of lavender and red fresh berries, touch of smoke, luscious, velvety palate with perfect black pepper and red fruit core, clean acidity and perfectly balanced.
I was very happy with the wine just by itself, but it also perfectly matched the main course, which I was contemplating for almost the whole trip, somehow not finding the right moment for – Steak Tartar. I don’t know when and how it became one of my favorites – I still like to recount the story of my horror when I ordered it for the first time at one of the Paris restaurants (8 years ago), and the plate with simply chopped raw beef appeared in front of me. After mixing the beef up with all the condiments, I found it absolutely delicious, and I do ever since. You can find steak tartar in US restaurants, but for some strange reason served already mixed, so I was definitely happy to have the classic version where I’m in control. And yes, the wine was working with the dish just fine.
As I loved the wine very much, I was in the mood for another glass, which quickly appeared on the table. Now it was the dessert time, and all of a sudden I was on the mission to find a good pairing. Desserts and dry wines are a tricky combination – more often than not you can end up having sweetness fighting with structure and tannins of the wine. I didn’t feel like cheese (also pairing of cheese and wine is greatly overrated – it is actually very difficult to create matching combination). My only option seemed to be a chocolate cake, but with that I was a bit concerned that chocolate might overpower the wine which was luscious, but quite light. Thus I decided to ask for the advice of my waiter. I found his recommendation a bit surprising – a modern dessert which combines fresh raspberries with almond tartlets and vanilla cream. However, he had a point, suggesting that the fruity core of the wine (same raspberries) would match well with the fruit in the dessert. Well, why not?
The dessert arrived, I took the first bite and the sip of wine – and couldn’t hold a smile. The dish and wine worked together like a charm, perfectly complementing each other and blending together, with the peppery notes of wine adding an interesting twist.
There you have it – a story of successful red wine and dessert pairing, something I would be skeptical of before – but now I know. Love all this learning opportunities the world of wine holds for us – and may your glass never be empty. Cheers!
Daily Glass: Pleasures of a Simple Côtes du Rhône
What do you think of Côtes du Rhône wines? Côtes du Rhône (I like to call them CdR for short) are some of my favorite home wines. A “little brother” of Chateauneuf-du-Pape, they often offer similar, may be a bit less expressive taste profile, usually at a fraction of a price. They are also quite versatile with food, offering a wide pairing range, from lamb to game to cheeses.
I was reminded today of how good these simple CdR wines can be. While traveling (I’m in south of France at the moment, near Nice), I asked for the local red wine at the restaurant. Red Provence (that would be a true local wine) are made in a very minuscule quantities, so it is not surprising that restaurant at a small hotel didn’t have any. I was offered to look at the wines from the neighboring territories, such as Côtes Du Rhône, and I ended up picking the cheapest wine on the menu. It so happened that 2013 Antoine Ogier Artesis Côtes du Rhône AOC (14% ABV, €21 at a restaurant) was an excellent choice. The wine had red fruit on the nose with a touch of lavender, very soft tannins on the palate, soft and silky profile, plums, touch of minerality and excellent acidity, overall very balanced. After about 30 minutes the wine also showed tobacco and touch of pepper on the palate – a very classic profile overall. Drinkability: 8-
What was even better than just a nice glass of wine was that wine worked perfectly with food – this was an accidental success, as I didn’t think about the wine at all while ordering the food. The wine paired spot on with the Rabbit Pate, elevating each bite. It did the same thing with Grilled Veal with Creamy Mushroom Sauce. Believe it or not, but it was not even disturbed by an interesting dessert – a Pineapple Carpaccio (called on the menu “raw marinated pineapple”) with Lime Sorbet. All I can say that this was probably one of the most versatile wines I ever had – kudos to the winemaker for crafting such food friendly wines – I guess 155 years of history mean something.
Before we part, I want to live you with a couple of curiosities. Below you will see the back label of that bottle of wine, providing sulfates warning in 21 languages (I already shared that on Twitter). I find this interesting and a bit ridiculous (sorry – wine always contains sulfates, and no, they don’t cause the headache). The second picture shows an extremely thoughtful presentation of the condiments. I shared this on Twitter too, noting that I like the classy presentation, something which French mastered perfectly, only to be ridiculed by someone asking me if ketchup is a French food. Of course it is not, but think about how many times you were presented with the bottle of ketchup at a restaurant, only to think “where should I put it to – on the plate or directly on the fries” – by the way, both are equally uncomfortable choices? In this case, the problem is solved in the best possible way – here is your personal bottle, and you don’t need to deal with any puzzles, just enjoy your food.

Rosé! It’s Good For Summer, And All Year Around
So tell me, dear reader – do you think Rosé is for summer, or is it a year-around wine? In January, when it is –10 outside, would you still reach for Rosè to drink with your dinner? No, you only need heavy reds, you say? But why? Your dinner menu doesn’t consist of 5 variations of the hearty beef stew, and so the wines you drink shouldn’t be just Cabernet Sauvignon from 5 different glasses.
Well, I think the real picture is not as bad as I’m hinting above. The same way as now literally every winery in the world added Rosé to their repertoire, wine drinkers developed better appreciation for Rosé, its light and playful character, and ability to complement wide variety of dishes.
And which region makes the most versatile Rosé? Provence, of course! Yes, Rosé is made everywhere nowadays, but when it comes to finesse and character, Provence Rosé is hard to beat.
I recently had an opportunity to taste the line of Rosé wines from Domains Roger Zannier, and it happened to be a great lesson in diversity of Provence Rosé.
Domains Roger Zannier Rosé line up consisted of three different wine, each one having its own unique personality. In a blind tasting I would never tell that the wines were made by the same producer. And the main quality – while extremely quaffable, these wines offer food for thoughts, they are asking you to focus and to figure out what you taste.
For what it worth, below you will find tasting notes for the Domains Roger Zannier wines – I hope the notes will illustrate my point:

Three wines, three unique and different taste profiles. And an important message – first of all, these are excellent, versatile wines. And then yes, they are pink (or mostly pink) in color.
Don’t let Rosé to hibernate away from your dinner table during fall and winter – no matter what temperature is outside, there is always place for a little Rosé in your glass. Cheers!
Seeing The World Through The Pink Glasses
What do you think we will be talking about today? Typically the “pink glasses” is just an expression, an allegory; we use it to say that all is good in the world. But sometimes those allegories can materialize, for instance, in the form of Rosé tasting.
Rosé is Rosé is Rosé. Rosé wines became extremely popular over the last 3–4 years. Nowadays, almost every winery I know of added at least one Rosé to their repertoire, if anything, to be available at least in the tasting room. But then there are those who started it all, for whom Rosé is a way of life and not just following the fashion and consumer demand. I’m sure that by now you figured that I’m talking about Rosé wines from Provence in France.
The Provence wine tasting I attended a few weeks more than two month ago was dedicated to all of the wines made in Provence, not just Rosé. However, if we will look at the stats of wine production in Provence, 89% of those wines are Rosé, 7.5% are red, and 3.5% are white, so it is no wonder that Provence is typically associated with Rosé. Total wine production in Provence in 2014 was about 177 million bottles. To give you more numbers, there are about 600 producers and 40 negociants in Provence. Overall, 9% of the wines produced in the world are Rosé, with the general trend of producing drier wines (particularly Provence Rosé has less than 4g of residual sugar per liter of wine). Provence is the largest region in the world dedicated to production of the Rosé wines. Also, France is the biggest producer and consumer of the Rosé wines, and U.S. is the biggest consumer of Rosé outside of France.
Provence was a cradle of winemaking in France, starting from the 600 B.C. in the area around Marseille. It is easy to understand why the wines were “rosé” in its style – maceration in contact with skin was simply not used, so the wine was produced from the juice which the grapes were “bleeding” after harvest, which would have a pinkish color. Today, the Rosé is produced in the very similar way as for the thousands of years, allowing only brief period of the skin contact. Most of the Provence Rosé are produced from Grenache, Cinsault, Mourvèdre, Tibouren, Carignan and Cabernet Sauvignon.
There are three main appellations in Provence, and one of those main appellations has four sub-appellations (you can see them on the map):
- Côtes de Provence AOP
- Côtes de Provence Sainte-Victoire AOP
- Côtes de Provence Fréus AOP
- Côtes de Provence La Londe AOP
- Côtes de Provence Pierrefeu AOP (First vintage in 2013)
- Coteaux d’Aix-en-Provence AOP
- Coteaux Varois en Provence AOP
Now, let’s talk about the seminar and tasting. In the seminar, we tasted 5 different Rosé wines from the different sub-appellations, as well as two reds. To be entirely honest, I didn’t find the dramatic differences between the wines from the different appellations – they were all Rosé wines, and I liked most of them (I’m a sucker for a good Rosé).

2011 Château La Mascaronne Rouge Faziole Côtes de Provence (SRP $25, Syrah, Mourvedre)

N: pepper, spices, herbs, tobacco – beautiful
P: same profile as on the nose – intense pepper, sage, herbs and mineral dominated, has lightness and leaves you desiring another glass. Might not be for everyone
V: Drinkability: 8+
2001 Château de Pourcieux Grand Millésime Côtes de Provence (Syrah, Grenache)
C: garnet
N: soft, touch of plume
P: subtle flavors meld well together, nice package overall
V: Drinkability: 7+/8-
The tasting consisted of 65 different wines, out of which one was white, 7 were red, the the rest (57) were Rosé. What I really liked about this tasting was a very unique format. Nobody was pouring the wines for you. All the wines were standing on the tables in the middle of the room, each wine having a sticker with the number on it. All the numbers were corresponding to the wine descriptions in the tasting booklet. Everybody were walking around and pouring the wines for themselves. The winery representative were all on hand, available to answer any questions. However, because of self pour, there was no need to wait for anyone to pour the wine for you, no need to stand there for 2 minutes, patiently waiting until the person pouring wine would finally notice you – here you could go at your own pace, and it was really convenient. I like this system a lot more than a traditional tasting.
For what it worth, below are my notes. I didn’t taste all 65 wines, but it was something close to it. I used my traditional tasting event rating system with the “+” signs, where “+++” means an excellent and highly recommended wine. All the wines listed below have at least “+++” rating, with the few even exceeding that. I also included additional comments where I had them. Grape composition is provided for all the wines, and suggested retail prices are indicated were available. Lastly, all the wines which don’t specify AOP come from the Côtes de Provence – all other appellations are included as part of the names. Here we go:

All in all, this was an excellent tasting. I don’t know if there is ever a bad year in Provence, but I definitely liked lots of 2014 Rosé, and I think you will too. Daily Glass: France, New Jersey, Oregon
Glass of wine (or two, but who’s counting) is a standard daily routine at our house (most of the time anyway). Hence these “Daily Glass” posts, where I talk about those “everyday” wines. What I’m trying to stress here that it is really an “everyday” wine phenomenon, as opposed to the wine dinners, birthday, holidays and other special occasions.
In today’s post I want to talk about my recent “everyday” wine experiences, which included wines from France, New Jersey and Oregon. I’m sorry, what are you saying? You never heard of the New Jersey wines? Really? Okay, fine, you got me. New Jersey wines are not my everyday wines either. But the wines are made in New Jersey, and some of them are pretty good wines, I have to admit.
Anyway, let’s talk about those recent “everyday” wines – shall we?
Let’s start with the two wines from France. First, 2005 Domaine Rolet Chardonnay Arbois AOC, Jura (13.5% ABV, $20?) – yes, a pretty rare bird – the wine from Jura. I got two bottles few years ago at the store in Massachusetts. This was my second bottle, and while I’m sure the wine would still can go on and on, I thought that 10 years should be good enough to open it. After initial whiff of oxidation on the nose (quite typical for Jura), the wine opened into delicious, balanced Chardonnay. White fruit on the nose, touch of vanilla. Clean acidity, Chablis-like minerality, touch of lemon and Granny Smith apples, perfectly fresh and balanced. Drinkability: 8-
Next wine was really an unexpected treat. I have to admit – I rarely drink Bordeaux. Inexpensive Bordeaux often under-delivers. And I really don’t want to experiment with $50 wines; $120+ wines are out of my league for the everyday consumption. But with this particular wine, the story was much simpler – “try before buy” is the best thing since the sliced bread, people! Stopped by my local favorite wine store, Cost Less Wines, for the traditional Saturday tasting. Lester, who usually runs the tastings, poured the wine from the decanter and warned me – “you might not like it”. 1994 Chateau Lilian Ladouys Saint-Estéphe (12.5% ABV, $15) – this is just a tasting, how bad can it be? First smell – amazing, mature wine with complex, fragrant bouquet. First sip – wow, dried fruit, hazelnut, spices, distant hint of cinnamon, fresh acidity – a perfect package. Turns out that the first bottle opened for the tasting was somewhat off, this is what prompted Lester’s warning. This wine was decanted for 2 hours, and it was perfect – I don’t know how much life it still has, but considering the way it was drinking, it definitely has a few more years to enjoy it. Drinkability: 9
And now, the moment you’ve been waiting for – New Jersey wines. Let me ask you something – what would be your expectations of the New Jersey wines? Yes, New Jersey is better known for its humongous malls, Jersey Shore or evenly spaced, monotonically numbered highway exits. Wines? Not something people would readily associate with the Garden State. I also had sad prior experience with one of the New Jersey wines, which I simply deemed “undrinkable”, so when I was asked if I want to participate in the virtual tasting of New Jersey wines, my first inclination was “thank you, but no”. After a second (or a fifth) thought, there was “well, may be?” moment, so I said – sure, will be glad to.
You would understand my skepticism even better if I will tell you that the wines offered for the tasting were not anything less than the classic varietals – Chardonnay and Merlot. I’m very particular with the flavor profile of both, as from my experience, it is very easy to screw up the respective wines. Okay, so the winery in point – Old York Cellars. Vineyards at Old York Cellars were planted in 1979, and the winery was first to produce commercial wines in New Jersey in 1981. Today winery produces about 6,200 cases from the 18 different grape varieties with Vidal Blanc, Cabernet Sauvignon and Marechal Foch been most popular among the customers. We learned these and many other interesting facts during the #VirtualVines twitter session with winemaker Scott Gares, who had been making wines for more than 20 years – “it’s the family business” he twitted.
Now, let’s talk about the wines. First, 2012 Old York Cellars Chardonnay (under 12% ABV, $18). When I just pulled the cork and poured wine into the glass, the first sip was simply not good. There was lots of salinity and soap, so my first thought was “here we go again” (referring to my prior experience with NJ wine). Oh well, let’s see what will happen. 30 minutes later, it was totally different wine. Touch of vanilla showed up on the nose. On the palate, the wine opened up into a clean, classic Chardonnay, plump, medium to full body, vanilla, apples and touch of butter on the palate, excellent balance. Don’t know why the wine started like it did, but the transformation was very impressive. I was upset when the bottle was finished, would love to have another sip. Drinkability: 8
Next wine was 2013 Old York Cellars Merlot (15.5% ABV, $18). From get go, this was one tasty wine. Dark fruit on the nose (without characteristic cassis though). On the palate, very interesting smoke and spice, with undertones of mudrooms and forest floor, and well present sapidity. A thought provoking red wine. Full bodied and concentrated, with excellent balance. What was also very interesting is that at 15.5% ABV, the alcohol was extremely well integrated – it was not showing on the nose or on the palate. Drinkability: 8-
So here are two wines which greatly exceeded my expectations – you know, it is the sip of the wine which becomes an ultimate truth. Perception holds a lot of power in the world of wine – but more on this later in the separate post. For now I can only recommend that if you will have an opportunity, try the Old York Cellar wines – at least I plan to continue doing that.
The last wine for today – 2011 Brick House Vineyards ‘Cuvée du Tonnelier’ Pinot Noir, Ribbon Ridge, Oregon (13% ABV, $45). Lately, I come across many wines made with biodynamic grapes – most of them are really good wines, but I’m still trying to form an opinion if those are just lucky accidents or a trend. Also, label specifically says that the wine is made with Biodynamic® grapes – Biodynamic with upper case and registered trademark symbol next to it – is “Biodynamic” like “Champagne” now? Anyway, the wine was delicious – a classic Pinot Noir nose with smoke and mushrooms, bright fresh fruit on the palate, very clean, round, perfectly balanced – a new world wine, yes, but perfect finesse and elegance. Biodynamic or what, but it was one tasty wine. Drinkability: 8

Liquid Pleasures Beyond Wine: Brandy
During 2011 I wrote a number of posts for the project called The Art Of Life Magazine – of course talking about my favorite subject, wine. The project was closed and even the web site is down, but as I still like the posts I wrote, I decided to re-post them in this blog. Also, in that project, posts were grouped into the mini-series, such as “Best Hidden Secrets” and “Forgotten Vines”. The post I’m offering to you today was from the mini-series called “Liquid Pleasures Beyond Wine”, and the subject of this post is Brandy.
Also note that the series was written for a slightly different audience – I hope none of my readers will take offense in the fact that sometimes I’m stating the obvious…
As you could’ve expected based on the last post, we are going to explore the world of “liquid pleasures beyond wine”, the world of spirits. Let’s start with Brandy, as it is closest to the wine world. To be more precise, wine is a foundation of a Brandy.
Brandy is produced in many different countries, but we should start our journey in France, where it was originated. While Brandy is a generic name for any wine-based spirits, in France Brandy mostly exists under other noble (and protected) names, such as Cognac, Armagnac and Calvados.
Of course Cognac is the most famous French spirit, however let’s start our journey from Armagnac, as historically it was the first region to produce brandy, starting in the 14th century. Armagnac is a region in the south of France, which has a status of AOC – it means that similar to the French wines, production of Armagnac is strictly regulated from start to finish. Armagnac is made out of grapes (about 10 different grapes can be used in production). Once grapes are harvested, pressed and fermented, the resulting liquid undergoes a process of single distillation, and then the spirit is placed into the oak barrels for aging. Armagnac’s age designation is similar to Cognac, which we will discuss a bit later in this post. Taking into account single distillation, Armagnac initially is harsher than the cognac, but it mellows down as it ages in the oak barrels for a minimum of two years.
Similarly to Armagnac, Cognac is also produced from the grapes (mostly Ugni Blanc, but some other grapes are also used). History of Cognac started in 16th century, when it was distilled from the local wine in order to withstand long ocean journey to the destination. Initially it was thought that after the ocean voyage, addition of water will convert spirit back to wine, but then it was found to be quite appealing on its own.
Same as the French wines regions, Cognac is an AOC, which is divided into 6 different zones, with Grand Champagne, Petite Champagne and Borderies being located in a middle of the appellation, and Fins Bois, Bon Bois and Bois Ordinaire surrounding them from all sides. Zone is usually designated on the bottle of cognac. There is also an additional designation of Fine Champagne, which is used if Grand Champagne and Petite Champagne are blended together. Again, same as with wines, the smallest appellation is the most restrictive as to what grapes can be used for the production of the cognac – for the cognac to be called Grand Champagne, all the grapes should be coming strictly from the Grand Champagne region, where for the bottle just labeled as Cognac, the grapes can come from anywhere within Cognac AOC.
In order to make cognac, it is necessary to start with wine. The grapes are harvested, pressed and fermented exactly in the same way as they would be for the wine production. Wine is typically fermented for 2-3 weeks, after which it undergoes process of double distillation (which removes harshness), and the resulting spirit is placed into the oak barrels (Limousine oak is typically used in cognac production) for aging. Cognac spends at least 2 years in the barrel, then it is typically blended with the cognac from different barrels and different ages to achieve persistent taste (here blending process is very similar to the one for the Champagne), and then it gets bottled. Of course some of the cognac spends 10, 15 and more years in the barrel, yielding a more mellow, more aromatic and complex beverage.
Looking at the bottle of cognac, you can always have an idea as for how long the cognac was aging in the barrel. If the label has letters VS (Very Special), it means that cognac spent at least 2 years in the barrel. VSOP (Very Special Old Pale) means that cognac was maturing for a minimum of 4 years, and XO (eXtra Old) has spent at least 6 in the barrel (but on average, XO is aged for about 20 years). There are some other designations, such as Napoleon, which typically designates age between VSOP and XO. One more interesting fact about cognac is that while there are about 200 producers, about 90% of the whole volume of the cognac attributed only to the four companies – Courvoisier, Hennessy, Martell, and Rémy Martin.
Our next stop is Calvados, where brandy is produced from apples. About 200 different types of apples (sweet, sour, bitter…) are used to produce Calvados. Production of Calvados started in 16th century, and it reached peak of popularity in 19th century, when grapes in the other regions were devastated by Phylloxera.
Production of Calvados starts from the harvesting of the apples, then pressing them and fermenting into dry apple cider. After that the liquid undergoes a process of distillation (both double and single processes are allowed), and then distillate is stored in the oak barrels for the further aging. Calvados should age for at least 2 years in the barrel before it can be released. In many cases it ages for anywhere from 2 to 6 years, but can go for 10, 15, 20 years and longer. Good Calvados, like the one from Adrien Camut, is a wonderful and fragrant drink, with hint of apples both on the nose and the palate, very balanced and delicious.
Leaving France, we have many potential Brandy destinations to visit – however, nobody can really compete with the France for the top spot in Brandy production. Nevertheless, we should mention a few other examples.
Georgia and Armenia started producing brandy in the 19th century, and taste-wise they were quite competitive with the actual French cognacs. They lost some of their edge after both countries became independent and experienced a lot of economic and political issues, but now they are slowly restoring their brandies back to the world class level. In both countries brandies are produced from grapes (wine). Just in case you are curious, you can look for Sarajishvili (Georgia) and Ararat (Armenia) brandies – both should be available in the stores.
I would like to mention two more brandies. First one, coming from Greece, is called Metaxa. It is a wine-based brandy, which is aged similarly to the French cognac, in the limousine oak barrels, and then blended with aged Muscat wine to create final product, which is typically very smooth and mellow (might be a touch too sweet, depending on your preferences).
Second one is coming from Italy and called Grappa. Grappa is made by fermenting of the grape must (skin, seeds and stems leftovers after wine production). Grappas are typically very strong with 53%-55% alcohol (typical brandy is 40%). As of the last 5-8 years, single grape grappas became very popular – and they have distinctive and delicate taste, despite still high concentration of alcohol.

Valentine’s Day Wine Experiences
Last week I gave you some recommendations for the wines to serve on Valentine’s Day. Now, let’s see if I followed my own recommendations.
Of course the plan was to start the evening with the Champagne – and then there was a … but. I recently got my hands (told you many times before – I love my friends) on the very interesting sparkling wine from UK. What was the most interesting for me even before I tried the wine is that it contains one of the extremely difficult to find, rare grapes called Schönburger. As I mentioned last time regarding my quest to complete all the grapes in the original Wine Century Club application, Schönburger was one of those “last standing”, extremely difficult to find grapes – and the Carr Taylor Brut was the only wine containing Schönburger, which Wine-Searcher was able to find pretty much anywhere. In case you are curious, Schönburger is a rose grape created in 1979 in Germany as a cross of Pinot Noir, Chasselas and Muscat Hamburg, As an added bonus, the Carr Taylor Brut contained another grape I never heard of, another cross from Germany called Reichensteiner.
Okay, now that I provided a full disclosure, let’s talk about the wines. NV Carr Taylor Brut Sparkling Wine, England (12% ABV, $35) was an excellent start for the evening. Fine bubbles, very intense, very reminiscent of Champagne. Hint of toasted bread on the nose and may be a touch of almonds. The palate had all the toasted and yeasty notes, packaged together in compact but bright way – the wine had no sweetness, but nevertheless was perceived as a fuller body than a typical Champagne. I would gladly drink this wine again any time – if it would be available in US. Drinkability: 8-
Now it was the time for Champagne – Pierre Peters “Cuvée de Réserve” Brut Blanc de Blancs Champagne (12% ABV, $55) – very classic, a hint of brioche on the nose, and nice toasted notes on the palate. Quite honestly, after the first sparkling wine, I wanted a bit more life in the glass – this was clean and fine, but more of the usual. Drinkability: 7+
Our next wine was a white Burgundy. Considering my limited experience with Burgundy, I was concerned if 10 years old wine would hold well (all of you, Burgundy buffs, please stop laughing out there – I’m still learning), so the Valentine’s Day seemed to be quite a good occasion to find out. This 2005 Domaine Fontaine-Gagnard La Romanee, Chassagne-Montrachet Premier Cru, France (13.5% ABV, $65) was outright delicious – beautiful nose of fresh apples, and then apples and honey on the palate – full bodied, supple, with perfect lingering weight in the mouth – this was really a treat. Too bad it didn’t last – but this was definitely an excellent wine. Drinkability: 8
Time for the reds, don’t you think? Remembering the pleasure of the Antica Terra Ceras Pinot Noir (here is the post in case you missed it), I wanted to try another Pinot Noir from Antica Terra – this time it was 2011 Antica Terra Botanica Pinot Noir Willamete Valley (13.2% ABV, $75). The nose was very similar to the Ceras – cranberries, touch of forest floor, lavender, bright and intense. On the palate, this wine had much bigger shoulders than Ceras. Ceras Pinot Noir need no breathing time – it was ready to drink from the moment the bottle was opened. Botanica needed a bit of time. After about 20 minutes in the glass, it showed its structure, dark concentrated fruit, touch of coffee, earthiness, all with a perfect balance, and again, finesse. Drinkability: 8
And then there was Opus One. 2001 Opus One Napa Valley (14.2% ABV, $250). Quite honestly, when I learned that we will be opening Opus One, I was a bit concerned. Yes, this is one of the legendary California Cabernet Sauvignon wines, and yet when I tasted it before, I was not blown away. And when you are not visually excited about $250 bottle of wine, you feel that something is wrong with you, don’t you think? Bottle is opened, and wine is poured in the glass. Based on the color, the wine looks like it was bottled only yesterday – dark, very dark garnet. On the nose, the wine was somewhat muted but pleasant – touch of black fruit and eucalyptus. On the palate, the wine was simply closed – and aggressively tannic, with a touch of green brunches on the finish. Well, to the decanter, of course. After about an hour in decanter, the wine definitely changed for the better, showing touch of cassis and coffee notes on the palate – the tannins still stayed, but reduced, and the finish became spicy, peppery if you will – still not leading to the “wow” which you want to find in the bottle like that. Oh well. Drinkability: 7+
As we were waiting for Opus One to come around, another bottle was pulled out – 1996 Robert Sinskey Vineyards RSV Stag’s Leap District Claret Napa Valley (13.9% ABV, $55). This wine amply compensated for the Opus One shortcomings – in a word, it was delicious. Perfectly young appearance in the glass was supported by the fresh fruit on the nose. And the palate had cassis, touch of mint, mocha, sweet oak, silky smooth tannins, perfectly layered and perfectly balanced. This was Napa Valley Cabernet at its peak, and it was not afraid to show it. Drinkability: 8
Logically (Valentine’s Day!) we had to finish on a sweet note. This was my first experience with Austrian dessert wine, and it was also a first experience with Kracher – I only heard the name before, but never tasted the wines. 2011 Kracher Auslese Cuvée Burgenland, Austria (12% ABV, $22) had everything you want in the dessert wine and nothing you don’t – delicious light honey notes, lychees, vibrant acidity, lemon peel – it was an outstanding way to finish the evening. Drinkability: 8
